Ingredients:
2lbs of oxtail - can sub for short ribs
1/4 cup Chinese cooking wine
2 tbsp of soy sauce
1 tbsp of dark soy sauce
3-4 bay leaves
3 pieces of ginger - 1/4" thick
2 tbsp of brown sugar
3-4 star anise - must must
1 whole garlic bundle/bulb - minced finely
1.5 cups of water - water should cover the oxtail half way
Salt and pepper to taste
Optional:
White rice
Green onions
First step, WASH and DRY thoroughly the oxtail. Then take a deep pot with a sturdy bottom - a dutch over or something equivalent and definitely NOT non-stick. You want a good sear on your oxtail to lock in that meaty oxtail flavor. Add oil and sear all sides of your oxtail.
I browned the oxtail in two separate batches
If you have it on high, it should take about 2-3 hours. Do not add additional water to the crock pot. The oxtail is done when the you can remove some of the meat with a fork. The oxtail should be SUPER glazed with the sauce, the sauce would have reduced by almost 75% by the time you are finished. Serve with steamed rice, DONE!
