Salt and Pepper Shrimp

Salt and pepper shrimp is so addicting and not that hard to prepare. To me, that's an awesome dish - something so soul satisfying but super easy to make. I like the simple things in life - sometimes- most times! This dish is commonly made for parties or during our Hmong holidays. If you know any Hmong people, we have lots of celebrations!

Ingredients:
1lb of shrimp - heads/tails on
All purpose flour - for dreading
4 jalapeños - to taste
4 stalks of green onion - I like the green part only
1 tsp of white pepper



First, you will want to fully clean your shrimp! This will take some time but its worth it. I trimmed the whiskers in the on head and trimmed the legs. Also, I did the daunting taste of deveining the shrimp. However, many choose to skip this step! Up to you! Place all your shrimp on paper towels to absorb the access water. Oil and water - is a hot mess. 


Second step would be to cut up the jalapeños and green onions. I like to slice them up thinly at an angle purely for presentation. It all ends up together so slice however you like.


Third step - now is a good time to turn on your stove to heat up the oil for frying- is to dread your shrimp with flour. Do this lightly and shake off any access flour. Flour helps the shrimp crisp up, which is the best part of this dish! 


Fourth step, deep frying! I like to fry a couple at a time because you do not want the temperature of the oil to drop - that will cause your shrimp to be gummy and pasty - not a good thing when deep frying! You only need to fry for a 1-2 minutes - its so quick!!! So do not walk away! Overcooked shrimp is never slightly.


Almost there! The shrimp will be this beautiful golden orange color. I like to place them on paper towels to get any excess oil. The shrimp are just barely cooked on the inside - so its moist and juicy. Yes, yes.


Final step! Stir fry the jalapeños in a bit of oil and then add in the shrimp along with the sliced green onions. You need to stir fry for a minute and do not forget to add white pepper - along with S&P to taste.


This dish takes about 15 minutes of cooking time from start to finish - the prep takes a bit longer because I had some extra steps with cleaning the shrimp. Serve this with rice or eat alone! If you need to reheat, please reheat in the oven for a couple minutes to crisp up the shrimp!
