Prime Rib Roast - Easy Prep and Cook
The holidays would not be complete without some stick to your ribs cooking. Therefore, this next dish is prime rib and I really love a good prime rib. This dish is so easy, easy prep and really easy cooking. A set it and it forget it (for a couple of hours). This prime rib is melt in your mouth tender and the seared garlic herb butter crust makes the meat extra special. Prime rib is delicious because of the fat so do not be afraid to keep the fat on during cooking and if you cook with the bone-in, its even more flavorful. I hope you enjoy making this dish!
Bake for 5 minutes for per pound, for 6 lbs of meat, cook for 30 minutes. Once the 30 minutes are up, turn off the heat completely, do not open the oven for any reason and cook for 2 hours. If you like it a little more rare, I would say remove after 1 hour and 30 minutes. I did that for my first roast and it was a bit more rare.
Once the cooking time is up, remove from the oven and let it rest while you make the au jus. The high heat has made this incredible crust on your rib that makes it extra tasty. Add your choice of sides and some horseradish. Viola!
Ingredients:
6 lbs of bone-in or 5lbs of boneless roast
1 stick of room temperature unsalted butter
1 head of garlic, minced
2 tablespoons of rosemary
2 tablespoons of thyme
1 tablespoon of lawry's seasoning
1 tablespoon of black pepper
1 tablespoon of salt
Optional:
Horseradish
Preheat your oven to 500 degrees F. Clean your roast well and pat dry. Set aside.
In a bowl, mix together the butter and spices. Once mixed, rub the mixture all over the roast. Don't be shy, make sure to butter the bottom as well. Once the roast is covered, place on a roasting tray.
