Chicken Soup with Sour Bamboo Shoots

HAPPY NEW YEAR!! 


This dish is not for the faint of heart because the sour bamboo shoots do have a particular smell that can turn someone's nose up. However, the taste is definitely more muted than the smell! Sour bamboo shoots are tangy and takes on the flavor the soup/broth its cooked in. Perfect for curries, stews and , stir-fries, and lastly soups. This recipe is one of my favorite comfort foods during the "cold" California months. Its definitely clean and simple tasting, I hope you enjoy it as much as I do!



Ingredients: 
1lb of chicken thighs cut into 2 inch cubes with skin on - or any dark meat
1 stalk of lemon grass
1/4 quarter cup of chicken stock - or 1 chicken bullion cube (add more according to taste)
1 teaspoon of salt
1 jar of sour bamboo shoots (with liquid) - cut into slices
3 whole Thai chilies
2 1/2 cups of water

One pot cooking! 

Boil the water and add the chicken with the lemon grass and chicken stock. Cook throughly, add sour bamboo shoots (with liquid) and thai chilies. Heat bamboo shoots through and taste. Add salt (and chicken stock) according to taste. The broth should be like chicken soup with a slight sour and spicy taste. Once the bamboo shoots are hot, serve over rice or serve like soup with a side of rice. I love to pour it directly over the rice and add a spoon full of Hmong chili sauce.
