Sweet Sriracha Baked Chicken Wings
Happy New Year! It's 2016! First post of the new year and it will be a spicy one! Okay, bad joke. Well, I love chicken wings but with the new year comes that same old resolution of eating better. Gyms are packed to the nines and my favorite health food store has been extremely busy lately. These baked wings are still really delicious but without all the guilt.
Ingredients: (2 servings)
1lb Chicken wings
1/2 small onion - food processor
4 cloves of garlic - food processor (I actually used a whole head of garlic)
1/2 cup of brown sugar
1 tablespoon of fish sauce
2 tablespoons of sriracha
1/4 cup of water
1 tablespoon of vinegar (I used apple cider vinegar)

I always wash my protein thoroughly, then pat dry with paper towels. Oil your parchment paper and place your wings with room to breathe and crisp up! Bake for 15-20 minutes or until brown, flipping the wings every 5 minutes for even cooking.
In the meantime, start your sauce! In a pot, sweat your onions and garlic on medium-high heat, do not burn them, so watch closely since we ran these through the food processor. Once the aromatics are translucent, lower your heat to medium-low add in your water, apple cider vinegar, fish sauce, sugar and finally your sriracha. Please adjust to taste. I added in a bit more sriracha but you may want more sugar. Once its all warmed up, 2-3 minutes, you may reduce a little longer for a thicker sauce (but I grew impatient), remove from heat and then add the chicken wings directly into the pot, mix well and serve!
