Refreshing Asian Chicken Salad

Summer bodies are made in the winter! SoCal has definitely been cold and wet this year and I have been enjoying hearty meals. Which is lovely in the tummy but hard on the waist line. It is time to get back into the game and start eating cleaner, lighter meals. This does not mean you have to skimp on flavor! I really enjoy Asian salads but many have those delicious fried wontons or other fried goodies that defeat the purpose of trying to be healthy. I made this delicious salad and you do not even miss the yummy carbohydrates we all crave! 


Ingredients: (4 servings)  
1 head of Napa cabbage - shredded 
1 lb of shredded chicken 
1 cup cilantro - chopped 
1 cup of carrots - matchsticks
1 cup of bell pepper - matchsticks
1 cup of green onion - matchsticks

Sauce: 
3 tablespoon of fish sauce
4 cloves of garlic - minced 
3 chili peppers - minced 
3 limes - juiced 
1 tablespoon of sugar (adjust to taste) 

This preparation is so simple! Prep all your items and mix together! For the sauce, start with fish sauce, lime juice, garlic and add in the chili peppers and sugar to taste.
