Zucchini and pork stir fry

Hellooooo! This next dish is super quick and satisfying. From the first time I had it I couldn't wait to have it again... but then again, I'm a huge sucker for pork and veggies. It must be the southeast Asian in me, WE LOVE PORK! Ground pork at that. And of course, as you grow older you realize you need to incorporate more vegetables into your diet.

Ingredients:
1/2 lb of ground pork
2 zucchini
1-2 teaspoons of salt
2 cloves of garlic - minced
2 tablespoons of Chili Garlic Sauce



First step is washing and cutting the zucchini into slices (pictured above) and mincing the two cloves of garlic, save the garlic for later. 


Next stir fry the ground pork in a deep saute pan until you cook the pink of out of it. No one likes raw pork!


Once the pork is cooked through add the chili garlic sauce directly into the pan. 


Along with the chili garlic sauce, add in all the zucchini and stir so the garlic sauce covers everything... making it DELICIOUS! 


The final step in cooking is adding the garlic... and cook for another 5 minutes... until the zucchini is tender but still al dente. Add salt to taste. Zucchini may need a little help, so it may take up to two teaspoons of salt. Start with one teaspoon and work your way up. 


As always, serve over rice... YUM!
