Claypot Korean Beef Bibimpap

One of the things I enjoy about cooking at home is being able to eat it any time I want and enjoy many days of leftovers. This dish takes a bit of time to prepare but you can prep all ingredients beforehand and assemble each time you are ready to eat. Plus its versatile, perfect for meat-eaters, vegetarians and even vegans. I hope you enjoy this recipe! 



Ingredients: 
Ground beef
2 carrots
1 zucchini
1 package of button mushroom
3 green onions
1 1" ginger
2 cloves of garlic
2 cups of Jasmine rice
1 tbsp soy sauce

Sauce:
2 tbsp gochujang
1 tbsp sesame oil
1 tbsp brown sugar
1 tbsp soy sauce
1 tbsp water
1 tbsp rice vinegar
1 tbsp minced garlic

Optional: 
Sesame seeds
Kimchi
Fried egg

First, please make sure to start cooking your rice in your rice cooker or on the stove.

Now to the cooking, the vegetables will be cooked separately, please feel free to add/subtract any vegetables you have or like. I forgot to pick up bean sprouts, I like the crunchy texture that it adds. To prepare all the zucchini into bite sized pieces, half the mushrooms and cut the carrots into matchsticks. Also, dice the green onions. Lastly, peel and mince the ginger and mince garlic. Tip, prepare extra minced garlic for your sauce.

Heat up a pan and cook all your vegetables separately, please remember to salt and pepper each vegetable. I learned from Top Chef that you need to season all your components! Each vegetable will take about 3-4 minutes to cook, place on a separate plate while the protein is prepared.

Once the vegetables are all cooked and put aside. Start by cooking the protein, add in 1 tbsp of soy sauce, minced garlic and ginger. Cook all the way through.

Once everything is prepared, its time to assemble into a clay-pot. Heat the clay-pot and add in some oil to the pot, then place the cooked Jasmine rice, then arrange the protein and vegetables. The rice will become crispy, which makes this extra delicious! Once all the ingredients are assembled nicely, top with green onions, bibimpap sauce, and sesame seeds. I topped mine with an egg! So delicious.
